Carnival Updates Dining Menu and Introduces New Restaurants

Carnival’s “Next Course” Brings New Restaurants, Faster Dining, and Fresh Flavors Across the Fleet

Carnal Cruise Line has officially unveiled The Next Course, a major culinary initiative that will introduce new restaurants, bars, menu updates, and dining enhancements across the fleet over the next several years.

With 29 ships sailing from 13 U.S. homeports, more than six million annual guests, and over 100 million meals served every year, Carnival has a massive amount of dining data to work with. That scale allows the cruise line to spot trends quickly and respond with new concepts designed to keep guests coming back for seconds. The biggest additions are scheduled to debut aboard Carnival Festivale in 2027 and Carnival Tropicale in 2028. But after our most recent Carnival cruise, it’s clear that some of these dining changes are already being tested and rolled out fleetwide.

Four New Restaurants Lead the Charge

The headline grabbers are undoubtedly the new dining venues scheduled for Carnival Festivale and Carnival Tropicale.

Perhaps the most anticipated is Emeril’s Coastal Seafood, a specialty restaurant created in partnership with Carnival Chief Culinary Officer Emeril Lagasse. The venue will focus on seafood-inspired cuisine and three-course dining experiences, building on the popularity of existing Emeril-branded venues already operating across parts of the fleet.

Guests looking for something more tropical will find Uku Lei Lei, a restaurant blending Hawaiian specialties with popular Asian flavors. Carnival says the first visit will be included for guests, making it an attractive option for cruisers wanting to try something beyond traditional buffet fare. Another newcomer is Fetaccine, which combines Mediterranean influences, Italian comfort food, and Greek specialties into one concept. Like Uku Lei Lei, the first visit will be included. This is a similar dining program that is used on the Carnival Celebration, Mardi Gras, and Carnival Jubilee, where guests may dine at both Cucina del Capitano and Chibang! once for free.

Exclusively aboard Carnival Festivale, guests will find Le Bistro Musicale, a French-inspired specialty restaurant featuring live music and a Parisian atmosphere. It appears designed to combine dining and entertainment into a single experience, something cruise lines have increasingly embraced in recent years.

New Bars Bring More Than Just Cocktails

Food isn’t the only focus. Carnival is also introducing four new bar concepts aboard Carnival Festivale.

The Spark will feature live performances and music-inspired cocktails. Mix will allow guests to customize drinks and experiment with unique flavor combinations. Festival Grounds Coffee & Bar merges specialty coffee culture with evening cocktails, while the Scenic Overlook Bar promises ocean views paired with premium beverages.

The emphasis on destination-style bars reflects a growing trend throughout the cruise industry. Guests increasingly want venues that offer more than just a drink. Atmosphere, entertainment, and social interaction are becoming just as important as what’s in the glass.

Fleetwide Changes Arrive Much Sooner

As exciting as the future venues sound, the biggest story may actually be what Carnival is doing right now.

The cruise line serves more than 100 million meals annually and welcomes over six million guests each year. Small improvements made across the fleet can have a bigger impact than any single restaurant debut. And that’s exactly what we’re starting to see.

Carnival has begun highlighting dishes inspired by crew members’ cultural backgrounds, introducing flavors that many guests may not have experienced before. The updates include new chef-inspired selections, expanded international offerings, and “Carnival Crew Favorites,” dishes inspired by the diverse backgrounds of crew members from around the world. Early guest reactions have highlighted items such as chicken satay, butter chicken, Singapore chili shrimp, and other globally inspired recipes.

Carnival has already started rolling out refreshed Main Dining Room menus across much of the fleet. During our last sailing, we noticed multiple menu additions and dining experiments that weren’t available on previous cruises. The Main Dining Room featured a giant soft pretzel appetizer that quickly became one of the most talked-about items at nearby tables. It wasn’t your standard cruise appetizer either—it was large enough to share and felt like the kind of comfort food Carnival guests gravitate toward.

The company is also updating menus at Lido Marketplace, BlueIguana Cantina, and Sea Day Brunch locations while expanding beverage offerings, including additional alcohol-free and zero-proof options.

Long known for breakfast burritos, tacos, and fresh tortillas, BlueIguana Cantina appears to be receiving additional attention as part of Carnival’s broader dining strategy.

We noticed BlueIguana Cantina was quietly offering rotating “dish of the day” specials for both breakfast and lunch. Instead of serving the exact same menu every day, guests could find different options depending on when they visited. In addition to the familiar huevos rancheros, dishes like huevos divorciados or freshly prepared quesadillas are featured on a rotating basis. This added variety is something that many repeat Carnival cruisers have been requesting for years. Rather than eating the exact same breakfast every morning, guests had opportunities to try new Mexican-inspired dishes throughout the voyage.

One interesting aspect of Carnival’s announcement is the inclusion of Bagels at Sea among its culinary highlights.

For many guests, this isn’t actually new anymore, as it was rolled out across most of the fleet at the beginning of this year. It’s a simple concept: fresh bagels toasted and served with your choice of toppings, available at either Pizza Pirate or Pizzeria del Capitano during the morning hours. Lines during peak breakfast hours suggest Carnival may have stumbled onto a surprisingly popular concept – and an example of how some of the most successful dining ideas don’t need to be elaborate specialty restaurants. Faster Dining for Modern Travelers

Carnival is also working to improve the overall dining experience through technology and efficiency.

New Express Dining options are designed to reduce meal times in the Main Dining Room for guests who prefer a quicker experience. That’s particularly valuable on busy sea days when travelers are trying to fit shows, activities, casino visits, and dinner into the same evening. The company is also introducing mobile coffee ordering and pickup, allowing guests to place orders through Carnival’s digital systems and skip traditional lines. For travelers who value convenience, these changes may ultimately be just as important as the new restaurants.

Carnival’s Next Course initiative isn’t simply about opening a few new restaurants. It’s a broader effort to modernize dining across the fleet while giving guests more variety, faster service, and additional options throughout their vacation.
